Thai Mango Salad


Ingredients:

  • 1 tbsp chili paste

  • 3 tbsp fish sauce

  • 1 tbsp vinegar

  • 1 tbsp brown sugar

  • 2 mangos, thinly sliced 

  • ½ red bell pepper, thinly sliced

  • ½ english cucumber, thinly sliced

  • ½ red onion

  • ¼ cup peanuts

  • 2 thinly sliced scallions 

  • 1 tbsp sesame seeds


Instructions:

  1. In a large salad bowl mix together, chili paste, fish sauce, vinegar and brown sugar.

  2. Add the mangos, bell pepper, cucumber, red onion and peanuts in the salad bowl and toss together.

  3. Top with thinly sliced scallions and some sesame seeds.
