Strawberry Pop Tarts


Ingredients:

Pop Tarts 

  • 1 cup fresh diced strawberries 

  • 2 tbsps strawberry jam

  • ½ cup softened cream cheese

  • ¼ cup powdered sugar

  • ½ tsp vanilla extract

  • frozen puff pastry

Icing

  • ½ cup powdered sugar

  • 2 tbsp lemon juice

  • food coloring (optional)

  • sprinkles (optional)


Instructions:

  1. Preheat the oven to 400 degrees.

  2. In a small bowl, mix together the diced strawberries and strawberry jam and set aside

  3. In a separate bowl, mix together the cream cheese, powdered sugar and vanilla.

  4. Use a rolling pin to thin out the puff pastry slightly and then slice the puff pastry in a small square.

  5. Top each square with some of the cream cheese mixture while leaving a ½ inch border around the edges.

  6. Add a spoon of the strawberry mixture on top of each square.

  7. Roll out a second sheet of puff pastry, cut into squares, and place on top of each square with the fillings. 

  8. Transfer the pop tarts to a baking sheet lined with parchment paper. Crimp all around the edges of each square with a fork.

  9. Brush the top of the pastries with a beaten egg and place in the oven for 15-20 minutes.

  10. While the pop tarts are baking, prepare the icing by mixing together the powdered sugar and lemon juice. If you would like to add color to your icing, add a few drops of food coloring of your choice to the icing. 

  11. The pop tarts are done once they have doubled in size and golden brown. Transfer them to a baking rack until cooled.

  12. Pour the icing over the top and add sprinkles.
