Strawberry Pop Tarts
Instructions:
Preheat the oven to 400 degrees.
In a small bowl, mix together the diced strawberries and strawberry jam and set aside
In a separate bowl, mix together the cream cheese, powdered sugar and vanilla.
Use a rolling pin to thin out the puff pastry slightly and then slice the puff pastry in a small square.
Top each square with some of the cream cheese mixture while leaving a ½ inch border around the edges.
Add a spoon of the strawberry mixture on top of each square.
Roll out a second sheet of puff pastry, cut into squares, and place on top of each square with the fillings.
Transfer the pop tarts to a baking sheet lined with parchment paper. Crimp all around the edges of each square with a fork.
Brush the top of the pastries with a beaten egg and place in the oven for 15-20 minutes.
While the pop tarts are baking, prepare the icing by mixing together the powdered sugar and lemon juice. If you would like to add color to your icing, add a few drops of food coloring of your choice to the icing.
The pop tarts are done once they have doubled in size and golden brown. Transfer them to a baking rack until cooled.
Pour the icing over the top and add sprinkles.
