Chocolate Cupcakes
Instructions:
Preheat the oven to 350 degrees and set aside a cupcake pan with paper liners.
In a mixing bowl combine the espresso powder, chocolate chips, and boiling water until the chocolate is fully melted.
Add the brown sugar, cocoa powder, vanilla extract, and vegetable oil to the melted chocolate and continue mixing.
Add the eggs and scrape down the sides of the bowl as necessary.
Incorporate the flour, baking soda and salt into the mixture.
Pour the mixture evenly into 10 cupcake liners.
Bake for about 20 minutes or until the cupcakes are done, then remove from the oven and cool completely.
Warm up the heavy cream for 20-30 seconds in the microwave, then add the chocolate chips. Let the chocolate sit for 1-2 minutes, then stir until smooth.
Once cooled, dip each cupcake in the ganache.
Decorate with cupcake toppers.
