Masala Fried Rice
Instructions:
Add a few tablespoons of oil to a pan, and add the cumin and let it bloom for a few seconds in the oil.
Then add your diced vegetables and sauté until they have softened.
Add tomato paste, salt, red chili powder, turmeric, and coriander to the pan, and let it cook for a couple of minutes.
Add a few dashes of soy sauce, water, and rice.
Sauté the rice with the vegetables until the rice is warmed through.
Create some space in the center of your pan, add another tablespoon of oil, and gently add 2 beaten eggs.
Gently cook the scrambled eggs, and then mix in with rest of the rice.
Finish with some thinly sliced green onions.
