Broccoli Cheddar Soup
Instructions:
Add butter to a large pot on medium/high heat.
Once the butter has melted, add the onion and carrots.
Once the veggies have softened, add salt and pepper and sprinkle in the flour.
Slowly pour in the chicken stock and heavy cream. Bring this to a boil and add the chopped broccoli.
Lower the heat to low, and let the soup simmer covered for 10-15 minutes.
If you prefer to blend your soup, use a a hand blender to blend the soup to your preferred thickness.
Mix in shredded cheese and once it has melted, season again with salt and pepper and leave to simmer on low heat until you’re ready to serve.
Serve the soup with crusty bread.
