Skillet Lasagna
Instructions:
In a large pan, sauté the diced onion in olive oil over medium heat.
Once softened, add minced garlic, black pepper, and crushed red pepper to the sautéed onions.
Add the ground chicken and cook through.
Add the chopped spinach and let the spinach wilt. Then add one full jar of a pasta sauce of your choice, then fill the jar with water, and add to the pan as well.
Bring the sauce to a boil and then lower the heat to a simmer.
Break up 6-8 lasagna noodles into small bite-sized pieces and add to the sauce.
Make sure the noodles are submerged in the sauce and then cover the pan with a lid, let the noodles cook on low-medium heat.
When the noodles have cooked through, mix in about ¼ cup shredded cheese.
When ready to serve, add a few dollops of ricotta cheese on top of the lasagna.
