Peruvian-Style Roast Chicken


Ingredients:

  • 8 chicken drumsticks

  • 3 tbsp olive oil

  • 1 heaping tbsp minced garlic

  • 1 tbsp smoked paprika

  • 1 tbsp cumin seeds

  • 1 tsp black pepper

  • 1 1/2 tsp salt

  • Juice from 1 lemon

  • 6-8 small potatoes, cut in quarters

  • 1 lemon, sliced

  • Cilantro, for garnish


Instructions:

  1. In a small bowl, combine olive oil, minced garlic, paprika, cumin, black pepper, salt, and lemon juice. Mix together well until it forms a thick paste.

  2. Place the chicken in a cast iron pan or large baking dish in one layer, then add the potatoes around the chicken.

  3. Pour the marinade over the chicken and potatoes and mix everything together well to make sure everything is coated in the marinade.

  4. Bake the chicken at 400 degrees for 45-50 minutes or until its completely cooked through and golden brown.

  5. Remove the dish from the oven and top with chopped cilantro.
