Mushroom & Scallion Gravy
Instructions:
Add olive oil to a pot on medium high heat, then add diced mushroom.
Cook the mushrooms until they are brown and crispy, about 2-3 minutes.
Once the mushrooms have crisped up, add the scallions and tarragon and saute until the scallions have softened.
Add butter and flour to the pan and cook for 1 minute.
Pour in the broth, salt and pepper, and mix well, making sure there are no lumps. Bring the mixture to a boil and cook for another 2-3 minutes while the gravy thickens.
Remove the tarragon sprigs.
If you’d like, mix in the drippings from your turkey or chicken for added flavor, otherwise leave the gravy as is.
You can make this in advance and keep in the refrigerator. When you’re ready to serve just warm it up and serve alongside meat, potatoes, etc.
