Cornbread with Mike’s Hot Honey Butter


Ingredients:



Cornbread

  • 1 cup all purpose flour

  • 1 cup yellow cornmeal

  • ⅔ cup sugar

  • 3 ½ teaspoons baking powder

  • 1 teaspoon salt

  • 1 cup milk

  • ⅓ cup oil

  • 1 egg

  • 1 15oz can whole kernel corn, washed and drained

Hot Honey Butter

  • 3/4 cup butter, at room temp

  • 3 tbsp Mike’s Hot Honey

  • 1/2 tsp red chili flakes

Instructions:

  1. Add all of the cornbread ingredients in a large bowl, and whisk together until well combined. (Leave 1-2 tbsp of the corn aside to sprinkle on top)

  2. Grease and line a 9x13 baking pan with parchment paper.

  3. Pour the batter into the prepared pan. Sprinkle with the remaining corn and bake at 400 degrees about 20 minutes or until a toothpick inserted in the center comes out clean.

  4. While the cornbread is baking, prepare the butter by whisking together the softened butter, hot honey, and chili flakes. If using unsalted butter, add 1/2 tsp of salt as well. Make sure the butter is well mixed so everything is incorporated.

  5. Serve the cornbread warm with the softened hot honey butter. Any extra butter can be kept in the fridge and used at a later time.
