Mini Tomato Tarts
Instructions:
Add tomatoes, 4 tbsp olive oil, and salt and pepper to a small bowl. Mix together and let marinate for 10-15 minutes.
In a small bowl, combine softened cream cheese, 1 tbsp olive oil, and salt and black pepper until well mixed.
Place a teaspoon of the cream cheese mixture on top of each round of pie crust. Top with a few pieces of tomato.
Crimp the edges of the tarts to build a little wall around the filling and place on a parchment paper lined baking sheet. Sprinkle the tarts with some sea salt and place in a 400 degree oven for about 15 minutes, or until the tarts are golden brown around the edges.
Drizzle the tarts with some olive oil, and sprinkle with fresh chopped basil.
