Mini Tomato Tarts



Instructions:

  1. Add tomatoes, 4 tbsp olive oil, and salt and pepper to a small bowl. Mix together and let marinate for 10-15 minutes.

  2. In a small bowl, combine softened cream cheese, 1 tbsp olive oil, and salt and black pepper until well mixed.

  3. Place a teaspoon of the cream cheese mixture on top of each round of pie crust. Top with a few pieces of tomato.

  4. Crimp the edges of the tarts to build a little wall around the filling and place on a parchment paper lined baking sheet. Sprinkle the tarts with some sea salt and place in a 400 degree oven for about 15 minutes, or until the tarts are golden brown around the edges.

  5. Drizzle the tarts with some olive oil, and sprinkle with fresh chopped basil.
