Cheesy Samosa Croquettes


Ingredients:


  • 2 cups cooked potatoes

  • 1 tsp salt

  • 1/2 tsp red chili powder

  • 1/2 tsp turmeric

  • 1/2 cumin

  • 1/2 ground coriander

  • 1/2 small red onion, finely diced

  • 1 serrano chili, finely diced

  • 2 tbsp chopped fresh cilantro

  • 2 eggs

  • 1/2 tsp salt

  • 1/2 black pepper

  • 1 cup all purpose flour

  • 1 cup panko breadcrumbs

  • Cheddar cheese (cut in 1/2 in cubes)


Instructions:

  1. Mash the potatoes until they are smooth.

  2. To the potatoes, add salt, red chili powder, turmeric, cumin, and ground coriander. Add onion, chilies, and cilantro, then mix the potatoes until well combined.

  3. Form the potato mixture into small balls- about 1 1/2 inches in diameter. Place a piece of cheese in the center of each ball, and make sure it is fully encased with the potato.

  4. Place the croquettes in the freezer for 10-15 minutes until they are firm.

  5. Set up a breading station - 1 bowl with all purpose flour, 1 bowl with eggs beaten with salt and black pepper, and 1 bowl with panko breadcrumbs.

  6. Remove the croquettes from the freezer. To bread them, first dip them in the flour, then the egg, then lastly the breadcrumbs. Make sure the croquettes are fully coated before moving to the next step.

  7. Deep fry the potato croquettes on medium/high heat until the are golden brown on the outside. The filling is completely cooked, so we just want to get them golden brown and crispy.

  8. Remove from the oil and lay them on a paper-towel lined plate to remove any extra oil.

  9. Serve with your favorite chutney/sauce.
