Lace Cookies


Ingredients:

  • ⅔ cup butter

  • 1 cup light brown sugar

  • ¼ cup corn syrup

  • 1 tbsp milk

  • ½ tsp salt

  • 2 tsp vanilla

  • 2 tbsp flour

  • 1 ½ cup old fashioned rolled oats

  • ½ cup pecans, finely chopped

  • melted chocolate, for decorating



     


Instructions:

  1. Preheat the oven to 375 degrees, and line a cookie sheet with parchment paper.

  2. Start by melting butter in a small saucepan

  3. Keep stirring the butter as it boils. The butter will foam and will eventually turn into a light brown color - that is when you should remove the pan from the heat.

  4. Mix in the light brown sugar, corn syrup, milk, salt, and vanilla.

  5. Add the flour.

  6. Add the oats and pecans or almonds to the mixture, and mix until everything is combined.

  7. Drop teaspoon-sized amounts of the batter onto the cookie sheet. (Note: these cookies will spread a lot)

  8. Bake the cookies for 6-8 minutes until they are golden brown.

  9. After about a minute, move the cookies to a cooling rack.

  10. Once the cookies have completely cooled down, decorate them by dipping the edges in melted chocolate or drizzling chocolate on top of them.
