Tortellini Soup
Instructions:
In a large pot add the chicken breast, carrot, onion, serrano chili, ginger, garlic, celery and green onions. Also add your chicken bouillon, salt and pepper.
Cover this with 6 cups of water and bring this to a boil. Cover the pot and simmer on low heat for 15-20 minutes until the chicken is cooked through and the veggies are tender.
Remove everything from the pot and strain the broth.
Bring the broth to a boil and add the pack of tortellini in. Let the tortellini cook for about 7-8 minutes or as instructed by the package.
Shred the chicken that you had removed from the broth and add it back with any veggies you want to add.
Add baby spinach and season to taste with salt and pepper.
Add fresh cilantro and serve.
