Tomato Soup


Ingredients:

Soup:

  • ½ yellow onion, diced

  • 2 cloves of garlic, thinly sliced

  • ½ tsp crushed red chili flake

  • ½ tsp turmeric 

  • 2 tbsp all purpose flour

  • 2 cup chicken or vegetable broth

  • 1 28oz can peeled tomatoes (preferably San Marzano)

  • salt, to taste

  • black pepper, to taste

  • 2 tbsp heavy cream

  • 1 tbsp honey

  • handful of basil

  • oil, for frying

Grilled cheese:

  • 4-5 tbsp mayonnaise 

  • ½ tsp garlic powder

  • fresh parsley, to taste

  • salt, to taste

  • pepper, to taste

  • sliced cheese of choice (preferably Habanero cheddar cheese)

  • bread of choice


Instructions:

  1. In a large saucepan, saute the onions in a few tablespoons of oil until they have softened.

  2. Add the garlic and spices. Cook the spices for a minute.

  3. Then add flour, and saute for 1 to 2 minutes.

  4. Add the broth and can of tomatoes, and season with salt and pepper.

  5. Let the soup boil until it thickens. This usually takes around 10 minutes.

  6. Once thickened, use a blender to puree the soup.

  7. Add fresh basil, heavy cream, and honey.

  8. Let the soup simmer on low heat for 10 to 15 minutes.

  9. For the grilled cheese, mix mayo, garlic powder, salt, pepper, and fresh parsley.

  10. Spread the mix on both the top and bottom of sliced bread.

  11. Add a slice of cheese on a piece of bread, and then top with another slice of bread.

  12. In a frying pan, cook the sandwiches on low heat until they are golden brown and crispy.

  13. Cut the sandwich in half and serve it with the tomato soup.
