Three Pepper Chicken
Ingredients:
- 1 lb boneless, skinless chicken thighs cut in 1-2in pieces 
- 2 tbsp minced garlic 
- 2 tbsp yogurt 
- 1/2 tsp salt 
- 1/2 tsp cracked black pepper 
- 1/2 tsp crushed red chili flakes 
- 2 serrano chilies, sliced 
- olive oil 
Instructions:
- Add 2-3 tbsp of olive oil to a skillet on medium-high heat. 
- Once the oil is hot, add the chicken and let it cook on one side for 1-2 minutes until golden brown on one side. Then flip the chicken and continue sauteing until the chicken is no longer pink, about 4-5 minutes. 
- Add minced garlic to the pan and cook for 1 minute. Then add the yogurt and continue cooking the chicken for 3-4 minutes until the chicken starts stick to the bottom of the pan and the yogurt is cooked out. 
- Add the salt, black pepper, red chili flakes, and sliced serrano chilies. Cook for another 2 minutes until the serrano chilies soften, then serve with rice or naan.
