Tarragon Chicken


Ingredients:

  • 3-4 thinly sliced chicken breasts

  • 1/2 tsp each salt, paprika, black pepper, and garlic powder

  • 2-3 tbsp olive oil

  • 1/2 shallot, finely diced

  • 1/2 cup chicken broth

  • 2-3 sprigs of fresh tarragon

  • 1/4 cup heavy cream

  • 1/4 tsp black pepper

  • 1/4 tsp red chili flakes


Instructions:

  1. Sprinkle chicken breasts on both sides with salt, paprika, black pepper, and garlic powder.

  2. Fry the chicken in olive oil on medium-high heat until golden brown on both sides. Remove the chicken from the pan and set aside.

  3. In the same pan, add the shallot and saute for 1 minute. When the shallot has slightly softened, add the chicken broth.

  4. Use your spatula to scrape the bottom of the pan to ensure all the flavor from the chicken is incorporated in the sauce.

  5. Add the tarragon and cream, then bring the sauce to a boil.

  6. Add the black pepper and red chili flakes (season with additional salt if needed - depends on the chicken broth). Then add the chicken, along with any juice back to the pan.

  7. Lower the heat to low, and let the chicken simmer in the sauce for 1-2 minutes.

  8. Serve with your favorite sides, such as rice, noodles ,or potatoes.
