Lobster Rolls


Ingredients:

  • 1 lb. lobster (substitute with cooked shrimp)

  • 1/4 cup mayonnaise

  • 1/4 cup finely diced red bell pepper

  • 1/4 cup finely diced celery

  • 1/4 thinly sliced green onions

  • 2 heaping tbsp fresh chopped dill

  • 1 tbsp vinegar

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • Brioche buns

  • Butter, for toasting buns


Instructions:

  1. If you’re using raw lobster: Place lobster in a large pot of boiling salted water for 4-5 minutes (for 4-6oz lobster tails). Cook longer if using whole lobster or larger tails. Remove the lobster from the pot and add to a bowl of ice water to stop the cooking process. When the lobster is completely cooled, remove the meat from the shell, then chop into large bite-sized pieces.

  2. In a mixing bowl, combine mayo, vinegar, veggies, dill, and salt and pepper. Mix together well, then gently fold in the lobster.

  3. In a large skillet on medium heat, toast the brioche buns in melted butter until golden brown on both sides.

  4. Generously fill the rolls with the lobster mixture. Serve immediately with lemon wedges and your favorite sides.
