Stuffed Jalapeno Tacos
Instructions:
On a baking sheet lined with parchment paper, place a couple of jalapenos and drizzle them with olive oil, and place them in the oven to broil.
Once they are charred on all sides (only takes a few minutes per side), remove from the oven.
Carefully peel off the skin, and use a sharp knife to make an incision down one side of the pepper.
Gently scoop out some of the seeds from the peppers.
Fill the insides of the pepper with shredded cheese and place back in the oven to melt.
Meanwhile, in a few tablespoons of oil, fry some sliced streak.
Add a packet of taco seasoning to the steak and let it cook until it’s tender.
When it’s ready, stuff your pepper with the meat mixture.
To assemble, place the stuffed jalapeño on a grilled tortilla.
Top with guacamole, salsa, onions, and cilantro.
