Spicy Smash Burger Sliders
Instructions:
Add the olive oil to a skillet with the onions, chillies and a pinch of salt. Saute on low/medium heat until the onions and peppers get light golden brown and crispy and then set aside.
Split the beef into 12 equal portions.
In a very hot pan, place the beef portions with 1-2 tbsp oil. Make sure the burgers are spaced apart in the pan. Place a small parchment paper on each ball and then smash them as thin as possible. Sprinkle each ball generously with salt and pepper.
The burgers are thin so they cook very quickly. When the bottom has a nice golden crust, flip.
Cut the slices of cheese so they fit the size of the patty. Top the beef patty with cheese and with the onions and peppers. Once the cheese melts and the burgers are cooked to your liking, set the patties in the pan aside and cook the rest.
For the sauce, mix the mayonnaise, ketchup, mustard, sriracha.
Toast your brioche buns with some butter and add sauce to the bottom bun and add the burger patties on top. Add the top bun and serve.
