Braised Beef
Instructions:
Add some olive oil to the bottom of a large Dutch oven.
Season large chunks of beef with a little bit of salt and black peppers, and add them to the pan in batches on medium to high heat.
Brown the meat on all sides, and then take it out in a bowl/plate and set it aside.
In the same pan, add the onion and carrots, and saute on medium heat.
Once the onions are translucent, add the minced garlic and tomato paste, and cook for a minute.
Then add the spices (salt, pepper, cumin, paprika), and cook for around 1-2 minutes.
Add 2 cups of the broth of your choice, the cooked beef, and a few sprigs of thyme.
Bring to a boil, then cover the pan. Lower the heat to low, and let the beef cook for 1-2 hours until it is tender.
After a couple of hours, turn the heat back up to high and let the mixture cook uncovered for 10-15 minutes so the sauce can thicken.
Serve over mashed potatoes, rice, noodles, or couscous.
