Spicy Crispy Deviled Eggs
Instructions:
Slice hard boiled eggs length-wise, and gently remove the yolk.
Place the egg yolks in a bowl and add, salt, paprika, mayo, serrano chilies, and mustard. Mix to combine well and set aside.
Set up a breading station with 1 bowl flour (seasoned with salt and pepper), 1 bowl with the beaten egg, and 1 bowl with panko breadcrumbs.
Dredge the eggwhite halves first in the flour, then the egg, then the panko breadcrumbs. Repeat with all of the whitewhite halves.
Gently fry the eggwhite halves in oil on medium-high heat for 1-2 minutes until golden brown.
Remove from the oil and let drain on a paper towel.
Use a spoon or piping bag to add the egg yolk mixture to the center of the eggwhite shells.
Garnish with a sprinkle of paprika and some chopped chives.
