Shrimp Pulao


Ingredients:

  • 6 tbsp oil

  • 1 tsp minced garlic

  • 1 tsp minced ginger

  • 2 tsp minced green chili

  • 6 tbsp fried onions

  • 1 tsp salt

  • 1 tsp garam masala

  • 1 tsp crushed red chili

  • 1 tsp black pepper

  • 1 tsp cumin

  • 1 tsp coriander powder

  • 1 tbsp chicken bouillon

  • ½ tsp turmeric

  • 6 tbsp yogurt

  • ¼ cup chopped fresh dill

  • handful of chopped cilantro

  • 1-3 chopped green chilies 

  • 2 cups water

  • 2 cups rice

  • peeled shrimp

  • oil, for frying


Instructions:

  1. First, wash the rice and soak in water for at least 15 minutes.

  2. In a pan, saute ginger, garlic, and minced green chilies in a few tablespoons of oil for around 30 seconds.

  3. Then add fried onions, and all the spices except turmeric.

  4. Mix in a few tablespoons of water and let the spices cook for a few minutes.

  5. Then add the turmeric and yogurt, and cook for 1-2 minutes.

  6. Add the dill, cilantro, and chopped green chillies.

  7. Add 2 cups of water, and the soaked rice.

  8. Once the water comes to a boil and the rice starts to float at the top, add in the shrimp.

  9. Change the heat to low, and cover your pan.

  10. Let the rice simmer for 15-20 minutes until it’s cooked through.

  11. Gently fluff the rice once it’s done, and serve.
