Palak Paneer
Instructions:
In a few tablespoons of olive oil, add onions, tomatoes, serrano chili, minced garlic, and minced ginger.
Saute on medium heat until the vegetables have softened.
Add the baby spinach, and cook until the spinach has wilted. Then transfer the spinach mixture to a small bowl, and let them cool.
In the same pan, add two tablespoons of oil, and then add all the spices.
Add a few tablespoons of water to the pan, and let the spices cook for a few minutes.
Once the spinach mixture has cooled slightly, place in a blender and blend together.
Add the spinach back to the pan with the spices, and mix it all together.
Bring to a simmer, and then add the butter and cream.
Once the cream has incorporated, mix in cubed paneer.
Let it simmer on low heat for at least 15 to 20 minutes so the flavors can meld together.
To serve, drizzle with a teaspoon of cream and serve with tandoori naan.
