Mushroom Soup


Ingredients:

  • 5 tbsp olive oil

  • 5 cups chopped mushrooms 

  • 1 finely diced shallot 

  • 2 thinly chopped scallion

  • 1 tsp salt 

  • ½ tsp red chili flakes

  • ½ tsp black pepper 

  • ½ tsp garlic powder

  • 1 tsp thyme 

  • 6 cups chicken/vegetable stock

  • ¾ cup cream

  • 2 tbsp cornstarch 

  • 4 tbsp water


Instructions:

  1. Add oil to a large pot and then add the mushrooms. Once the mushrooms have browned, add the shallot and scallions. 

  2. Once the shallots and scallions soften, add salt, red chili flakes, black pepper, garlic powder and thyme. Cook the spices for about a minute.

  3. Add chicken or vegetarian broth and cream. Cover the pot and let the soup simmer on low for as long as you can(at least 15 minutes).

  4. Using a hand blender, blend the soup to your linking.

  5. To thicken the soup, mix together the cornflour and water and add to the soup. Bring this to a boil and then serve.
