Mediterranean Pasta Salad
Ingredients:
1 orange bell pepper
1 red bell pepper
1 red onion
salt, to taste
pepper, to taste
1 box of fusilli pasta
sliced cherry tomatoes
sliced cucumbers
sliced pepperoncini peppers
chopped cilantro
cubed feta
Dressing:
4 tbsp olive oil
2 tbsp red wine vinegar
½ tsp dijon mustard
½ tsp salt
½ tsp black pepper
1 tsp dried oregano
Instructions:
Start by cutting the bell peppers and onion into large squares, and add them to a mixing bowl.
Then drizzle with some olive oil, and season with salt and pepper.
Toss so everything is coated evenly.
Place the vegetables in a single layer in an air fryer at 400 degrees for about 7-8 minutes until they are roasted abd slightly charred. Alternatively, you can place them on a cookie sheet and bake in the oven at 450 degrees.
Then cook a box of fusilli pasta according to the instructions on the packaging.
For the dressing, combine all the ingredients in a large mixing bowl and whisk together.
In the bowl with the dressing, add the cooked pasta, roasted vegetables, cherry tomatoes, cucumbers, pepperoncini peppers, cilantro, and cubed feta.
Toss, and serve.
