Mediterranean Pasta Salad
Ingredients:
- 1 orange bell pepper 
- 1 red bell pepper 
- 1 red onion 
- salt, to taste 
- pepper, to taste 
- 1 box of fusilli pasta 
- sliced cherry tomatoes 
- sliced cucumbers 
- sliced pepperoncini peppers 
- chopped cilantro 
- cubed feta 
Dressing:
- 4 tbsp olive oil 
- 2 tbsp red wine vinegar 
- ½ tsp dijon mustard 
- ½ tsp salt 
- ½ tsp black pepper 
- 1 tsp dried oregano 
 
Instructions:
- Start by cutting the bell peppers and onion into large squares, and add them to a mixing bowl. 
- Then drizzle with some olive oil, and season with salt and pepper. 
- Toss so everything is coated evenly. 
- Place the vegetables in a single layer in an air fryer at 400 degrees for about 7-8 minutes until they are roasted abd slightly charred. Alternatively, you can place them on a cookie sheet and bake in the oven at 450 degrees. 
- Then cook a box of fusilli pasta according to the instructions on the packaging. 
- For the dressing, combine all the ingredients in a large mixing bowl and whisk together. 
- In the bowl with the dressing, add the cooked pasta, roasted vegetables, cherry tomatoes, cucumbers, pepperoncini peppers, cilantro, and cubed feta. 
- Toss, and serve.
