Malai Chicken Karahi


Ingredients

  • 1 lb. boneless chicken, cut into 2 inch pieces

  • 3 tbsp olive oil

  • 1 tbsp thinly sliced fresh ginger

  • 3 cloves garlic, thinly sliced

  • 1-2 serrano chilies, per spice preference

  • 1 tsp salt

  • 1/2 tbsp red chili flakes

  • 1/2 tbsp cumin seeds

  • 1 tbsp ground coriander

  • 1/2 tbsp black pepper

  • 1/2 cup yogurt

  • 1/4 cup cream

  • 1 large handful chopped fresh cilantro, for garnish

  • 1 tbsp thinly sliced ginger, for garnish

  • 1 sliced serrano chili, for garnish


Instructions:

  1. Add olive oil to a large pan/wok on medium high heat, and saute sliced ginger, garlic, and chilies until light brown.

  2. Add the chicken and saute.

  3. When the chicken is no longer pink, add the spices and water. Continue cooking for another 2-3 minutes on medium heat, making sure the spices don’t burn.

  4. Add the yogurt and cook the chicken until mostly all of the water from the pan evaporates, about 8-10 minutes.

  5. When the chicken is fully cooked through and there is no more water left in the pan, add the cream and reduce the heat to low.

  6. Let the sauce simmer for 1-2 minutes, then remove from the heat and add all the garnishes.
