Garlic Chicken Mini Pizzas
Ingredients:
Garlic Sauce:
2 tbsp butter
1 tbsp minced garlic
1 tbsp all purpose flour
1 cup milk
1/2 tsp salt
1/2 tsp black pepper
1/2 crushed red chili flakes
Chicken:
1 lb boneless chicken, cut in small pieces
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp black pepper
1/2 tsp red chili flakes
To Assemble:
Mini naans
diced tomatoes
diced green onions
chopped cilantro
shredded mozzarella
fresh mozarella
Instructions:
Garlic Sauce
In a small saucepan, add butter and minced garlic. Cook on medium heat for 1-2 minutes, making sure not to burn the garlic.
Add flour and mix to form a paste. Cook for another minute, then slowly add the milk while whisking.
Once all of the milk has been added, bring the sauce to a boil and cook for another 1-2 minutes until thickened. Remove from the heat and set aside to cool.
Chicken
In a skillet, add a few tbsp of olive oil and the diced chicken. When the chicken is no longer pink, add all the spices and saute until the chicken is cooked through completely. Set aside.
To Assemble
Preheat the oven to 425 degrees.
Place the mini naans in a single layer on a cookie sheet, then top each one with 12 tbsp of the garlic sauce.
Add the chicken and other toppings to your pizza. Feel free to customize in any way you like.
Lastly, top the pizzas with a little bit of salt (and crushed red chilies, if you like).
Bake for 8-9 minutes or until the cheese has melted and the pizzas are crispy around the edges.
