Firni (Pakistani Rice Pudding)
Instructions:
In a pot, combine milk, rice flour, sugar, and cardamom. Whisk until well combined.
Let the mixture simmer on medium heat for about 15 minutes until it has thickened. The rice pudding should be thick enough to coat the back of a spoon or spatula (run a finger on the back of the spoon and confirm the streak does not go away).
Let the rice pudding cool slightly, then pour it into individual serving dishes or one large dish.
Top the pudding with any nuts or garnishes you like and refrigerate for at least an hour. The pudding will thicken as it cools.
Serve cold.
