Cucumber Shrimp Sushi Boats
Instructions:
Slice the mini cucumbers in half.
Use a small spoon to remove the seeds.
In a bowl, combine raw peeled shrimp and olive oil.
Then add salt, paprika, and garlic powder to the bowl, and toss to make sure the shrimp is evenly coated.
Add some olive oil to a frying pan. When it gets hot, add the shrimp, and make sure to flip it so both sides are evenly cooked.
Add a few dashes of soy sauce to the boiled rice, mix together, and set it aside.
To make the sauce, add sriracha, mayo, and honey to a bowl, and mix well.
To assemble, add some rice to each cucumber boat, and top with your shrimp (around 3-4 pieces of shrimp on one cucumber boat).
Then drizzle your sauce on top, and finish with sesame seeds.
