Crispy Rice Salad


Ingredients:

Salad

  • 1/2 cup sliced cucumbers

  • 1/4 red bell pepper, thinly sliced

  • 1/4 white onion, thinly sliced

  • 1 green chili, thinly sliced

  • 1/2 cup grilled flank steak (or chicken, shrimp, etc.)

Crispy Rice

  • 1/2 cup cooked white rice

  • 1 tbsp garlic chili paste/sriracha

  • 1 tbsp olive oil

Dressing

  • 1 tbsp oil

  • 1 tsp chili garlic paste

  • 1 tbsp vinegar

  • 1 tsp soy sauce

  • 1 tsp fish sauce

  • 1/2 tsp/a few dashes of sesame oil

  • 1 tbsp fresh chopped cilantro

  • pinch of salt


Instructions:

  1. Mix together rice, chili garlic paste, and olive oil. Spread the rice evenly in the pan and air fry at 400 degrees for about 8-12 minutes or until the rice is golden brown and crispy. Set aside and let cool.

  2. In a small bowl, whisk together the ingredients for the dressing and set aside.

  3. In a large mixing bowl, mix together the veggies, grilled steak, crispy rice, and dressing.
