Crispy Rice Salad
Ingredients:
Salad
1/2 cup sliced cucumbers
1/4 red bell pepper, thinly sliced
1/4 white onion, thinly sliced
1 green chili, thinly sliced
1/2 cup grilled flank steak (or chicken, shrimp, etc.)
Crispy Rice
1/2 cup cooked white rice
1 tbsp garlic chili paste/sriracha
1 tbsp olive oil
Dressing
1 tbsp oil
1 tsp chili garlic paste
1 tbsp vinegar
1 tsp soy sauce
1 tsp fish sauce
1/2 tsp/a few dashes of sesame oil
1 tbsp fresh chopped cilantro
pinch of salt
Instructions:
Mix together rice, chili garlic paste, and olive oil. Spread the rice evenly in the pan and air fry at 400 degrees for about 8-12 minutes or until the rice is golden brown and crispy. Set aside and let cool.
In a small bowl, whisk together the ingredients for the dressing and set aside.
In a large mixing bowl, mix together the veggies, grilled steak, crispy rice, and dressing.
