Chili Cheese Toast
Instructions:
Drizzle toast with olive oil and broil on high in the oven until golden brown on both sides - about 1-2 minutes per side.
In a mixing bowl, combine all other ingredients. Season to taste with additional salt or red chili flakes per your preference. (You can substitute or add any veggies that you like, just ensure they are finely diced)/
Generously scoop a few tbsp of the veggie and cheese mixture onto each piece of toast.
Place the toast in the oven at 350 degrees for about 10 minutes, or until the cheese has completely melted.
