Butter Chicken Paratha Calzones
Instructions:
Preheat the oven to 350 degrees.
Add the onions and olive oil to a pan on medium heat and saute the onions until they are light brown in color.
Turn the heat to low and add the pureed tomatoes, salt, turmeric, chili powder, cumin, coriander and garam masala and cook for 10 minutes.
Add dried fenugreek leaves and cream and let it simmer for 5-10 minutes and them add some butter.
Remove and set aside ⅓ of the sauce.
Add the shredded chicken to the remaining sauce.
Thaw each paratha for a few minutes and then top one half of the paratha with a few spoonfuls of the cooled chicken mixture. Top this with a slice of your choice of cheese.
Flip over the top half of the paratha and crimp the edges with a fork to seal the filling.
Once assembled, these can be baked right away or frozen to enjoy later.
Bake the parathas for 25-30 minutes until golden brown.
Serve with the reserved sauce for dipping.
