Badam Ka Halwa (Almond Halwa)
Instructions:
In a large pan on medium heat, melt butter/ghee and add the almonds.
Cook the almonds for 1-2 minutes then remove from the pan and set aside.
In the remaining butter/ghee, add almond flour and semolina.
Toast the almond/semolina mixture on medium low heat for about 10 minutes- making sure it doesn’t burn.
Slowly whisk in the water, making sure there are no clumps. Then add the saffron water and cardamom.
Continue cooking the mixture for 10 minutes until it thicken and you can see the bottom of the pan.
Add the sugar and cook for another 10 minutes.
Chop the almonds you set aside, then add those to the halwa.
Garnish the halwa with more nuts and rose petals. You can serve the halwa warm or cold.
