Vanilla Berry Puffs


Ingredients

  • 2 sheets of puff pastry, cut into 24 pieces (3x2 inch squares or any shape you like)

  • 1 egg, beaten

  • 2 cups heavy cream

  • 1/3 cup powdered sugar

  • 1 tsp vanilla

  • 3 tbsp instant vanilla pudding mix (do not use a mix that needs to be cooked)

  • Strawberries and raspberries, for garnish

  • Powdered sugar, for garnish


Instructions:

  1. Use a small cookie cutter or a sharp knife to score a 1/4 border around the edges of your puff pastry, making sure not to cut all the way through the pastry dough. This will help you push in the center of the pastry to make room for the cream.

  2. Brush the puff pastry with the beaten egg.

  3. Bake at 400 degrees for 15-18 minutes until the pastry has puffed up and is golden brown. Set aside and let cool completely.

  4. While the puff pastry is cooling, whip together heavy cream with sugar, vanilla pudding mix, and vanilla until you form soft peaks.

  5. When the pastry is completely cool, use a sharp knife or small spoon to cut the pastry along the border that you scored to create a well in the center.

  6. Use a spoon or piping bag to fill the center of the pastry with the vanilla cream - be generous.

  7. Top the cream with cut strawberries and raspberries (or any other fresh fruit you like).

  8. Generously sprinkle the pastries with powdered sugar.
