Thai Coconut Green Curry
Ingredients:
1 tbsp ginger, thinly sliced
2 cloves of garlic, thinly sliced
1 jalapeno pepper, thinly sliced
scallions, thinly sliced
2-3 tbsp green curry paste
few handfuls of spinach
1 can coconut milk
handful of chopped cilantro
2-4 tbsp brown sugar (white sugar or honey works as well)
2 cups chicken or vegetable broth
seafood or vegetables of choice
oil, for frying
Instructions:
Start by sautéing the ginger and garlic in a few tablespoons of oil.
Add the jalapeño pepper, and cook until softened.
Add the scallions and green curry paste.
Cook the curry paste until it darkens in color.
Then add spinach, and cook until it wilts.
Add an entire can of coconut milk, and bring to a boil.
Add the chopped cilantro. You can leave the sauce as is, or blend it if you like.
Then add the sugar and broth, and let the sauce come to a boil and thicken.
Add your seafood or vegetables of choice, and let the curry simmer on low heat until everything is cooked.
Serve with noodles or rice.
