Street Corn Pasta Salad
Instructions:
Add a few tablespoons of olive oil to a pan, and add the fresh corn.
Season with salt and black pepper and sauté for 3-5 minutes. Then remove from the heat and let cool completely.
In a large mixing bowl, combine sour cream, mayo, lemon and the spices.
In the bowl, add pasta, corn, scallions, cilantro, jalapeño, avocado, and cotija cheese.
Serve at room temperature, or refrigerate for a while.
