Steak Tacos
Instructions:
Start by adding the scallion, Serrano chillies and red onion to a pan on medium heat. Char the vegetables on all sides, making sure to rotate every couple of minutes and then remove them from the pan.
Allow the veggies to cool, then add them to a blender/food processor with the cilantro, sour cream, mayo, lemon juice, water, salt and chili powder. Blend this until smooth and refrigerate until you are ready to use.
To the steak, add some olive and a generous amount of taco seasoning with some salt. Make sure the steak is well coated and let it marinate for as long as you can.
Add the steak to a very hot pan and cook it to your desired preference.
Let the steak rest for at least 10 minutes before slicing thinly against the grain.
To assemble, add a few tablespoons of the serrano sauce to the coleslaw and combine.
Lay the coleslaw down on some grilled tortillas and then add the thinly sliced steak. Add more of the sauce on top with some sliced avocados, add any more toppings of your choice and serve.
