Spicy Chow Mein
Ingredients:
2-3 tbsp neutral oil
1 serrano chili, sliced
1 tbsp fresh sliced ginger
1/2 lb. thinly sliced boneless skinless chicken
3 cups shredded cabbage
1/2 shredded carrot
1/2 red onion, thinly sliced
1 bunch green onion, sliced into 2 inch pieces
1/2 tsp salt
1/2 tsp black pepper
1 chicken bouillon cube
6 oz cooked chow mein noodles
Sauce
2 tbsp oyster sauce
2 tbsp soy sauce
1 tsp white vinegar
1 tsp sesame oil
1 tsp chili paste
1 tbsp sugar
1/4 cup water
Instructions:
In a large wok, add oil, ginger, and serrano chilies on medium high heat.
Once the ginger and chilies start to brown, add the sliced chicken, salt, black pepper, and chicken bouillon, and cook until the chicken is no longer pink.
Add in all the veggies and saute until they soften, about 2-3 minutes.
While the veggies cook, mix together all of your sauce ingredients in a small bowl.
Add the cooked noodles to the wok, along with the sauce, and continue cooking for another 1-2 minutes on high heat. Remove from the heat.
Garnish with more green onions and serve.
