Smashed Tater Papri Chaat


Ingredients:

  • 2-3 cups frozen tater tots

  • 1/2 cup greek yogurt

  • 1/4 cup water

  • 1 tsp chaat masala

  • 1/2 tsp salt

  • 1/2 tsp red chili powder

  • 1/2 cup garbanzo beans (plus more for garnish)

  • finely diced red onion

  • finely diced tomato

  • chopped fresh cilantro

  • finely diced serrano chilies

  • cilantro chutney

  • tamarind chutney


Instructions:

  1. Preheat the oven to 425 degrees. Add tater tots to a greased/lined baking sheet and bake for 15 minutes.

  2. Remove the baking sheet from the oven and smash each tater tot with the back of a glass or measuring cup. Place the tater tots back in the oven for another 15 minutes until crispy. Remove from the oven and let them cool.

  3. In a mixing bowl, mix together yogurt, water, chaat masala, salt, and red chili powder. Add garbanzo beans and the smashed tater tots (once cooled). Fold the potatoes and tater tots gently together until the potatoes are coated in the yogurt.

  4. Add the yogurt/tater tot mixture to a serving dish, then top with veggies, cilantro chutney, and tamarind chutney. Serve immediately.

  5. If making ahead: Bake the tater tots and prep the yogurt mixture and garnishes in advance. Right before serving, mix the tater tots and yogurt together, then assemble.
