Riz au Lait (French Rice Pudding)
Instructions:
Start by adding a cup of water to a large saucepan and the rice.
Bring the water to a boil, and cover for 5 minutes on low heat. The water will have cooked out by this point.
To the rice, add milk and cream, and bring to a boil.
Then add sugar and vanilla, and let the mixture cook on medium heat for 15 to 20 minutes.
Remove from the heat and let the rice pudding cool. It will thicken as it cools.
For the salted caramel, add sugar to a saucepan.
Continually mix the sugar on medium to low heat until it has melted completely and there are no lumps.
Add butter, and mix until fully melted and incorporated.
Cook the sugar with the butter for about a minute. It will be a darker amber color
Then add the cream. The mixture will bubble up so be careful.
Remove from heat and stir in salt. Set it aside.
In a large mixing bowl, whip up ½ cup of heavy cream.
Add the whipped cream into the cooled rice pudding, and stir.
To assemble: spread some salted caramel around the sides and bottom of your serving bowl.
Then fill up the bowls with the rice pudding.
Drizzle with some more caramel, and top with pecans.
