Masala Mac & Cheese
Instructions:
Saute the diced onion in the olive oil. Once the onion is lightly browned and translucent, add garlic and ginger. Cook for a minute and then add the tomato, jalapeno and all the spices(salt, turmeric, chili powder, ground cumin and coriander). Add a little water to make sure the spices do not burn.
After the vegetables have softened to a paste, add the butter and sprinkle in the flour.
Cook the flour for about a minute and then slowly mix in the milk, making sure there are no lumps.
Once the milk thickens and comes to a boil add the cheese to the sauce. Lower the heat and let simmer until your pasta is ready.
Cook your pasta in boiling salted water for 1 minute less than package directions.
Drain the pasta and add to the sauce and let it finish cooking.
Toast the breadcrumbs with some olive oil and mix in chopped cilantro.
To serve the mac and cheese garnish with breadcrumbs and sliced jalapeno.
