Jalapeno Mac and Cheese
Instructions:
In a large skillet on medium heat, add the butter, olive oil, scallions and diced jalapenos.
Saute the scallions and jalapenos have softened.
Add the all purpose flour and cook for 1 minute.
Slowly pour in the whole milk, make sure to stir/whisk quickly to ensure no lumps form.
Add the salt, paprika, chicken bouillon, and garlic powder. Bring the milk to a boil, then reduce the heat to low.
Boil your pasta according to package instructions and save 1 cup of pasta water.
Add the monterey jack and habanero cheddar to the milk and mix together until melted.
Add the cooked pasta with the reserved pasta water to the sauce. When all the pasta is coated in the sauce, remove from the heat
Add half the pasta to an oven safe dish and sprinkle with some shredded cheese. Top with the rest of the pasta and sprinkle with more shredded cheese. Add sliced jalapenos to the top.
Turn the oven on broil and let the top brown for a few minutes and then serve.
