Spicy Fried Chicken Sandwich
Ingredients:
Marinade:
1 c milk
1 tsp lemon juice
½ tsp red chili powder
1 tsp garlic powder
2 tsp salt
1 tsp black pepper
4 skinless and boneless chicken breasts or thighs
Coleslaw:
2 tbsp mayo
1 tsp dijon mustard
1 tsp vinegar
1 tsp sugar
Salt, to taste
Black pepper, to taste
2-3 handfuls of shredded cabbage
2 tbsp fresh cilantro
Chicken coating:
1 c flour
½ c corn starch
1 tsp garlic powder
1 tsp salt
1 tsp black pepper
Sauce:
2 tbsp melted butter
¼ c hot sauce
brioche buns
sliced jalapeno peppers
oil, for frying
Instructions:
Mix milk and lemon juice in a bowl, and let it sit for 5 minutes. Then add the spices.
Add the chicken, and let it marinate for at least an hour or overnight.
For the coleslaw, mix the mayo, mustard, vinegar, salt, pepper, and sugar in a bowl.
Then combine the cabbage and cilantro, and then let the coleslaw rest in the fridge.
For the chicken coating, mix together flour, corn starch, garlic powder, salt, and pepper in a mixing bowl.
Add in 1-2 tablespoons of the marinade, and mix that into the flour mixture.
Remove the chicken from the marinade, and coat it in the flour mixture.
Shake of the excess flour, and carefully place the chicken into a pan with hot oil.
Cook the chicken for 3-4 minutes of each side until it is golden brown, and then let it rest on plate lined with paper towels to blot the excess oil.
In the meantime, make the sauce. Mix the butter and hot sauce, and then dip the chicken into the sauce until it is well coated.
Toast the brioche buns in a frying pan.
To assemble, place the chicken on the bottom bun, then add a large spoonful of coleslaw, sliced jalapeno peppers, and then place the top bun to close the sandwich.
