Dynamite Shrimp Tostadas


Ingredients:

  • 2-3 avocados

  • 1 serrano pepper 

  • 1 pack of wonton wrappers or egg rolls

  • diced shrimp

  • salt, to taste

  • pepper, to taste

  • 1 tbsp mayo

  • 1-2 tbsp sriracha 

  • 1 tbsp honey

  • olive oil, for frying


     


Instructions:

  1. Slice the avocados thinly and sprinkle them with lemon juice so they don’t brown. 

  2. Thinly slice a serrano pepper and set aside. 

  3. Grab some egg rolls/ wonton wrappers, and use a round cookie cutter to cut them into small circles. 

  4. Heat up some oil and fry the wontons. 

  5. Remove from the oil and drain on a paper towel until they're cool. 

  6. To a skillet, add a little bit of olive oil, and on medium/high heat, add some diced raw shrimp. 

  7. Season with salt and pepper. 

  8. Sauté until cooked through. The shrimp is cut into very small pieces so it should only take 1 to 2 minutes. 

  9. In a small bowl, combine mayo, sriracha, and honey. 

  10. Then add the cooked and cooled shrimp to the bowl, and mix in the sauce. 

  11. To assemble, lay down the crispy wontons. 

  12. Then top each one with a few slices of avocado, the sauce coated shrimp, and chilies.
