Chickpea Fattoush Salad
Ingredients:
3 tbsp white balsamic vinegar
1 tbsp lemon juice
½ tsp salt
½ tsp black pepper
5 tbsp olive oil
1 can garbanzo beans
1 cucumber, diced
½ red bell pepper, diced
½ red onion, diced
5 pepperoncini pepper, sliced
4 tbsp chopped cilantro
2 tbsp chopped mint
1 cup cubed feta cheese

Instructions:
Start off my cutting pita bread into small pieces.
Drizzle the pita bread with olive oil, sprinkle with some sea salt, and toss to make sure everything is coated.
Then bake in a single layer in the oven or an air fryer at 400 degrees until crisp on all sides.
Make the dressing directly in the salad bowl: add balsamic vinegar, lemon juice, salt, pepper, and olive oil, and whisk to combine.
Then to the bowl with the dressing, add a can of washed and dried garbanzo beans, diced cucumber, diced bell pepper, diced onion, sliced pepperoncini peppers, chopped cilantro and chopped mint, and toss to combine.
Then add the cubed feta cheese, and the crispy pita chips.
Toss it one last time, and you’re ready to serve the salad.
