Chicken Salad Sandwiches
Ingredients:
½ cup mayo
3 tbsp red wine vinegar
1 tbsp zaatar
½ tsp salt
½ black pepper
2-3 tbsp olive oil
1 large handful chopped fresh cilantro
1 whole bunch green onions, thinly sliced
3 cups cooked diced chicken
mini croissants
microgreens
Instructions:
In a mixing bowl add mayo, red wine vinegar, zaatar, salt, pepper, cilantro, green onions and olive oil. Mix to combine.
Fold in the cubed chicken.
Make a lengthwise cut on top of the croissant, and then stuff the top with a few spoonfuls of the chicken.
Top with some microgreens and serve.
