Charsi Chicken Karahi
Ingredients:
4 tbsp olive oil
1 lb. boneless chicken, cut into bite-sized pieces
1 tbsp minced garlic
1 tsp salt
3 roma tomatoes, cut in half
2 serrano chilies, sliced lengthwise
1 tbsp thinly sliced ginger
1/2 tsp kashmiri red chili powder
1 tsp black pepper
1/4 cup fresh chopped cilantro
Instructions:
In a large skillet, on medium high heat, add oil and chicken. Cook the chicken until it is no longer pink, then add the garlic and salt and saute for a couple minutes.
Add the tomatoes, skin-side up, to the pan, then lower the heat to low and cover with a lid.
After 5 minutes, remove the lid and remove the skin from the tomatoes. Gently smash the tomatoes in the pan.
Add the green chilies, ginger, and spices to the chicken, then cover again and let the chicken cook on low for 10 minutes.
Remove the lid, add the fresh cilantro, then remove from the heat.
Garnish with more sliced serrano chilies, fresh ginger, and cilantro. Serve with naan or rice.
