Cast Iron Potato Pizza
Instructions:
Garlic Sauce
In a small saucepan, add butter, minced garlic, red chili flakes, salt, and black pepper. Cook on medium heat for 1 minute, making sure not to burn the garlic.
Add flour and mix to form a paste. Cook for another minute, then slowly add the milk while whisking.
Once all of the milk has been added, bring the sauce to a boil and cook for another 1-2 minutes until thickened. Remove from the heat and set aside to cool.
Pizza:
Preheat your oven to 475 degrees with the rack on the highest level.
Heat a cast iron skillet on medium heat, then add 1 tbsp of olive oil.
Roll out the pizza dough on an oiled surface, then lay it carefully in the bottom of the skillet, making sure it covers the bottom of the pan completely.
Lower the heat to low, and add a generous layer of the cooled garlic sauce on top of the dough.
Sprinkle the cheese evenly over the entire pizza, then top with the sliced potatoes. Make sure the potatoes are as thinly sliced as possible (so you can almost see through them) and add them in a single layer.
Drizzle the top of the potatoes with a little more olive oil and sprinkle with salt and pepper.
Check the bottom of the dough - once it is light golden brown, place the cast iron in the oven. If the dough is not golden brown let it cook on the stove for 1-2 more minutes.
Bake the pizza for 10-15 minutes until it is brown and bubbling on top.
Remove from the oven and carefully slide the pizza onto a cutting board before slicing.
