Cardamom & Cinnamon Blondies
Instructions:
Preheat the oven to 350 degrees. Line an 8x8 pan with parchment paper, and set it aside.
In a mixing bowl, add the butter and light brown sugar, and whisk until combined.
Add the egg and egg yolk, and mix until combined.
Then add the vanilla, salt, cardamom, cinnamon, and baking powder, and whisk.
When everything is combined, add in the flour and gently fold in. (Note: the key to blondies is not to over mix, so mix gently and only until the flour is incorporated)
Add the white chocolate chips, and mix gently. You can also add anything else you like - nuts, dried fruit, chocolate, etc.
For the sugar mixture, add the sugar, cardamom, and cinnamon into a small bowl, and mix.
Pour the batter into the 8x8 pan. You can top with more white chocolate chips, if you like. Sprinkle the sugar mixture on the blondies.
Bake for 25-30 minutes. When the blondies are done, they should be goey in the center, and light brown around the edges. Do not over bake them.
Remove them from the baking pan, and cut into squares.
