Cajun Chicken Pasta
Instructions:
Heat up the olive oil in a pan.
Generously season your chicken breasts with salt and cajun seasoning.
Lay the chicken in the pan and cook each side for 3-4 minutes. Let the chicken brown on each side before flipping. Once it is cooked, remove from the pan and set aside.
To the same pan add the red onion, bell pepper and garlic. Saute the veggies until they soften and then season with salt and more cajun seasoning.
Cook the vegetables for 1-2 minutes and then add the chicken stock and heavy cream. Let this sauce simmer on low until your pasta is ready.
Cook your pasta 1-2 minutes less than package instructions and then add to the pan. Also save and add ½ your pasta water to the pan with the pasta.
Mix in the grated parmesan.
To serve, slice the chicken and serve over the pasta. Garnish with chopped cilantro.
